    Cheesy garlic baguettes

    These cheesy garlic baguettes feature a layer of melted cheese covering a tangy tomato-based spaghetti sauce filling. They make the perfect side dish to serve with soup or pasta, or you can simply enjoy them as a light snack.

    Imagine a crusty baguette, smothered in garlic butter, topped with a tangy tomato-based sauce and covered in golden melted cheese. That's what you get when you make these tasty cheesy garlic baguettes!

    They make a delicious snack when you are enjoying a sundowner, a tasty side dish with soup or pasta, and are perfect when served either on their own or with a side salad as a quick lunch.

    They are great to serve with a barbeque instead of the normal garlic bread. I also enjoy eating these garlic rolls dunked in a bowl of peri-peri chicken livers!

    The tomato sauce is simply a jar of your favourite spaghetti sauce that you can buy from your local supermarket. I think a tomato and basil-flavoured sauce works well in this recipe, but you can use whatever flavour you prefer.

    I make these cheese garlic baguettes with 6-inch long baguettes from my local supermarket, but you can make them with any bread roll, whether a crusty ciabatta or a soft hot dog roll - use whatever you like!

    This cheesy garlic bread is a quick and easy recipe you can make in minutes. Let me show you how to do it!

    Ingredients

    I've given quantities in the recipe for 4 people, but that's just a guide. You can adjust the quantities to make however much you need.

    • Bread rolls - you will need one small roll or half a large roll per person.
    • Spaghetti sauce - use your favourite flavour. For this recipe, I used tomato and basil-flavoured sauce because I think the basil in the sauce goes well with garlic, but depending on how I intend to serve these rolls I sometimes use the tomato and mushroom flavour.
    • Garlic paste - I used garlic paste because I didn't want pieces of garlic on the bread. Garlic paste mixes more easily into the butter. If you prefer to use fresh garlic, that will be fine. Just make sure you crush it finely.
    • Butter - this is mixed with the butter to make the garlic butter for spreading onto the rolls. To make it easier to mix ensure your butter is at room temperature.
    • Grated cheese - I used a mixture of cheddar and mozzarella. You can use any cheese that melts well.
    • Parsley - this is optional and used for garnish.

    Instructions

    Combine the butter with the garlic. Cut the baguettes in half and spread them with the garlic butter. Arrange the rolls on a baking tray.

    Bake the rolls in a hot oven (200C / 400F) for 5 minutes until the butter is melted and the baguettes start to crisp around the edges.

    Remove the baguettes from the oven and spread a thin layer of the spaghetti sauce onto each roll.

    Top the rolls with grated cheese and return them to the oven. Bake for 7 to 8 minutes until the cheese is melted and golden.

    I like to garnish the rolls with chopped parsley, but this is totally optional.

    Tips for a perfect outcome

    Here are my top tips so that you get a perfect result every time:

    • Ensure your butter is at room temperature so it is easy to mix it with the garlic. To soften butter in a hurry, fill a glass bowl with boiling water and let it stand for a few seconds. Tip the water out and place the heated bowl over your block of butter. The heat from the bowl will soften the butter quickly.
    • Use garlic paste rather than fresh garlic. This will ensure you don't end up with bits of garlic in the butter. If you are using fresh garlic make sure to mince it very finely.
    • I like to toast the baguettes lightly once I've spread them with garlic butter. This gives the rolls a head start in the crispy department!
    • Spaghetti sauce from a jar can be quite strong. Don't overdo it when spreading the sauce onto the bread. A thin layer of sauce is fine.
    • Be sure to cover the bread with enough cheese to cover the rolls completely.
    • Keep your eye on them once they are in the oven. As soon as the cheese has melted and started to turn golden you can take them out of the oven. The suggested time is a guideline only.

    Storage

    You can assemble these rolls ahead of time and freeze them. If you decide to do this you can skip the first step where you bake the rolls with the garlic butter.

    Bake them from frozen, following the time and temperature given in the recipe instructions. You may need to add an extra minute or two to the time to allow for them being frozen.

    Leftover garlic baguettes can be stored for a day or two in a container in the refrigerator and reheated for a few minutes on a baking tray in the oven.
    After that, the bread will be inclined to go stale.

    • ¾ cup / 100 grams grated cheese
    • 1 small bunch parsley chopped (optional)
