Rolled fajitas covered with cheese sauce and baked in the oven

Large frying pan with lid
Baking dish (7" x 9" or 18cm x 23cm)
1pound(450g) turkey breastsliced into strips
1largeonioncut into 1cm dice
1mediumred bell peppercut into thin slices
1mediumyellow bell peppercut into thin slices
1cup(75g) chopped mushrooms
2tablespoonssunflower or canola oilfor frying
flour tortilla wrapsthe number will depend on the size
2teaspoonsdried onion salt
1teaspoondried chili flakesadjust to your own taste
saltto your own taste
2tablespoons(15g) cornflour / cornstarch
1cup(120g) grated cheeseto mix into the sauce
½cup(60g) grated cheesefor sprinkling on top
saltto your own taste
Slice the turkey breasts into thin slices
Peel and chop the onions into 1cm (1/2") dice
Deseed the peppers, rmove the membranes and slice thinly
Peel and finely mince the garlic
Wipe the mushrooms with a damp cloth and slice thinly, or cut into quarters.
Heat the oil in a large frying pan and fry the onions, garlic and peppers over a low heat until they start to soften. You can cover with a lid to speed up the process - just keep your eye on them so they don't burn.
Add the mushrooms and continue to fry until they soften and release their juices
Add the sliced turkey and the spice mix and stir well to coat the turkey with the spices
Turn up the heat slightly and stirfry for 2 to 3 minutes until the turkey is no longer pink.
Taste for seasoning and add salt if necessary.
Set aside to cool.
Assemble the fajitas
Place one of the wraps on a flat surface and place a large spoonful of the cooled turkey mixture just below the centre.
Fold the bottom of the tortilla up over the filling and then fold in both sides.
Then fold over to form a parcel.
Repeat until all the turkey mixture has been used.
Place the folded tortillas in a single layer in a baking dish.
Melt the butter in a saucepan
Remove from the heat and stir in the cornflour / cornstarch. Stir well to remove any lumps.
Add 1 cup milk, return to the heat and stir until the mixture thickens. If the mixture is too thick, add the remaining milk slowly until the desired consistency is reached.
Add the grated cheese and stir until the cheese has melted.
Taste for seasoning and add salt to taste if necessary
Pour the cheese sauce over the tortillas and sprinkle with grated cheese.
Heat the oven to 180°C / 375°F
Place the baking dish into the pre-heated oven and bake for 20 minutes until the cheese is melted and golden.
Remove from the oven and serve.
I used 12" tortillas and the filling was sufficient for 4 large wraps. You can use smaller tortillas if you prefer, and adjust the amount of filling accordinglyWhen you are frying the onions and peppers, if you cover the pan with a lid this will speed up the cooking process.Don't worry if the turkey is not 100% cooked when you fry it with the vegetables. It will complete the cooking process when the dish is baked in the oven.When making the cheese sauce, you shoud aim for a nice thick pouring consistency. Remember the sauce with thicken further when you add the cheese.
